Marinated Labneh Balls
Labneh is a traditional Middle Eastern soft cheese. Nomadic tribes traveling through the Judean deserts preserved their goat's milk by making it into labneh, rolling it into balls and storing it in jars with olive oil and herbs. The oil preserved the cheese for months. However, we recommend that you it. We make lowfat yogurt from our Jersey cow milk then drain it til it is the consistency of cream cheese. Then we spice it with fresh minced garlic, olive oil, dried parsley and salt. We roll it into balls and drop it in olive oil with more herbs. It is delicious on bread, especially pita bread, or as a vegetable dip.
